Fiona Kennedy
1 whole rack of baby back pork ribs (about 2 1/2-lb.)
5 Tbs. Sweet Rib Rub Seasoning (7062)
Heavy duty wide aluminum foil
Remove papery membrane from the back of the ribs, using a paper towel to help grip it and tear it away from the bones. Place a large piece of aluminum foil, dull side down, on counter. Place ribs, meaty side down, on foil. Rub half of spice mixture on ribs. Carefully flip ribs and now apply the remaining rub to the meaty side. Wrap and seal ribs well and refrigerate for at least 2 hours and up to overnight.
Heat oven to 250F. Place wrapped ribs on a sheet pan and bake for 2 hours. Remove ribs from oven and carefully unwrap them but still leave them on the foil. You want to expose the top surface of the ribs. Return ribs to oven and bake about 1 1/2 hours more, or until the ribs are brown and tender.
