Nashville Hot Spicy Tofu

The seasoning might be called Nashville Hot Chicken but this versatile blend can add heat to just about anything. This creamy spicy tofu can be used to as a sushi roll filling, served with brown rice, or simply scooped up with cucumber slices.

Ingredients
14-oz. firm tofu, cut into ½-in. cubes

2 Tbs. Nashville Hot Chicken seasoning
1½ Tbs. rice vinegar
1 Tbs. maple syrup
2 tsp. soy sauce
2 tsp. toasted sesame oil
4 green onion, thinly sliced (about ½ cup)
2 Tbs. mayonnaise
Directions
Place tofu cubes between 2 double layers of paper towels and let sit for 20-30 minutes. Whisk together Nashville Hot Chicken seasoning, rice vinegar, maple syrup, soy sauce and sesame oil in a small bowl. Heat a large non-stick skillet over medium-high heat and add tofu cubes in a single layer. Cook 8-10 minutes, tossing cubes occasionally, until most of them are golden brown. Add liquid mixture to pan and reduce heat to medium. Cook, stirring occasionally, for 2-3 minutes or until sauce is mostly absorbed. Remove pan from heat and stir in green onion and mayonnaise. Serve warm or cold.
Recipe Note
Serve this addictively spicy tofu over sushi rice with avocados and your choice of crunchy vegetables or in a sushi roll or as a sandwich filling.
