These crunchy savory shrimp cakes come together in no time and since they are cooked in the air fryer, there is much less mess. Serve them on their own with a squeeze of lime or serve them on little Hawaiian rolls as sliders.

Ingredients

1 lb. raw shrimp, peeled and deveined

3 green onions, thinly sliced (about 1/2 cup)

2 tsp. Spicy Citrus Mojo seasoning (7076)

2 tsp. vegetable oil

1/4 tsp. baking soda

1 cup panko bread crumbs

cooking spray

lime wedges for serving
Directions
Take 1/3 of the shrimp and cut into pieces about 1/2-in. in size. Place the rest of the shrimp in the bowl of a food processor and process until smooth. Place the shrimp paste, chopped shrimp, green onion, Spicy Citrus Mojo, vegetable oil and baking soda in a medium mixing bowl and stir until well combined.
Place panko in a medium mixing bowl. Using an ice cream scoop or your hands, form shrimp mixture into 10 balls (about 3 Tbs. each) and drop them into the panko. Gently roll the balls so they are coated in panko, then flatten them into 1/2-in. thick disks and place them on a plate.
Preheat air fryer to 400F. Spray shrimp patties with cooking spray and cook for 7-9 minutes, or until golden brown and cooked through, flipping over once during cooking. Serve warm with lime wedges.
