This spiced apple butter will fill your home with the most welcoming scent of caramelized apples, cinnamon, ginger, and nutmeg. It's lovely on toast, slathered on pancakes, or stirred into yogurt. I also love serving it with grilled pork chops or using it as a filling for cinnamon rolls.

Ingredients
-
2 Tbs. unsalted butter
-
3 lbs. apples, peels and cores discarded, apples sliced into ½-in. pieces
-
½ cup firmly packed light brown sugar
-
2 cups apple cider
-
½ tsp salt
-
1 ½ tsp. Pumpkin Spice (5164)
-
1 tsp. apple cider vinegar
Directions
Heat oven to 300F. Heat butter over medium-high heat and add apples and sugar. Cook 5-7 minutes and then add apple cider and salt. Bring mixture to a simmer, reduce heat to medium, and cook apples 20-30 minutes, stirring occasionally, until most of the liquid has been absorbed and apples are soft.
Here, you have a decision to make. If you like a silky smooth apple butter, let mixture cool until room temperature, then place apples in blender and blend until smooth. Return apple mixture to pot and place pot in oven. If you like a little texture in your apple butter, simply place the pot in the oven. Cook 1 hour, stirring every 30 minutes. After 1 hour, stir in Pumpkin Spice and return pot to oven. Cook 1 more hour, stirring after another 30 minutes. The mixture should be drier and thicker than applesauce. Remove pot from oven and stir in apple cider vinegar. Transfer mixture to a jar and store in refrigerator.
