Air Fryer Chicken Taquitos

These delicious crunchy chicken taquitos are much healthier because they are made in the air fryer as opposed to being deep fried.

Air Fryer Chicken Taquitos

Ingredients

  • 1-lb. boneless skinless chicken thighs

  • 1 Tbs. vegetable oil

  • 2 Tbs. Taco Seasoning (7051)

  • 1/2 small onion, diced (about 1/2 cup)

  • 4-oz. cream cheese

  • 6-oz. shredded cheddar (about 1 1/2 cups)

  • 1/2 cup your favorite salsa

  • 16 corn tortillas

  • cooking spray

  • salsa, guacamole, and sour cream for serving (optional)

Directions

  1. Preheat oven to 400F.  Place chicken, oil, Taco Seasoning, and onion in medium mixing bowl and mix well.  Place on a parchment paper lined sheet pan and bake 25 minutes, or until chicken is cooked through.  Let cool to room temperature.

  2. Chop chicken mixture coarsely and return to mixing bowl.  Add cream cheese, shredded cheddar, salsa and mix well.

  3. Place tortillas on a microwave-safe plate, cover with a damp paper towel, and heat for 30 seconds to 1 minute, or until tortillas are more pliable.  Place 3 Tbs. of chicken mixture on each tortilla, roll up tightly, and place seam side down on a sheet pan.  Repeat with remaining tortillas and filling.

  4. Preheat air fryer to 380F.  Coat taquitos with cooking spray and cook for 6-10 minutes, or until golden brown and crispy.  You will need to do this in several batches, depending on the size of your air fryer.  You want the taquitos to be spaced apart and not touching.
