Spicy Brown Chipotle Baby Back Ribs
Preheat oven to 350 degrees.
BBQ Sauce: In a blender combine, diced mangos, Chipotle Peppers in Adobo, Ketchup, Apple Cider Vinegar, Turbinado Sugar, Ground Yellow Mustard Seeds, Worcestershire Sauce, and 2 tablespoons Spicy Brown Rib Rub.
Dry Rub: Remove the silver skin from the underside of the ribs. Rub the ribs on both sides with the remainder of the Spicy Brown Rib Rub and sprinkle with Applewood Smoked Salt. Place the ribs in a roasting pan and cover tightly with aluminum foil.
Bake the ribs in the oven until they are tender (approximately 90 minutes). Heat the grill to 300 degrees. Grill the ribs for 15 minutes on each side. Baste several times with the BBQ sauce. Let the ribs rest for 5 minutes before slicing into individual servings.

- 15 ounces diced mangos, fresh mango is best
- 28 ounces Chipotle Peppers in Adobo
- 1 cup Ketchup
- ½ cup Apple Cider Vinegar
- 2 tablespoons Turbinado Sugar
- 1 tablespoon (5039) Ground Yellow Mustard Seeds
- 1 tablespoon Worcestershire Sauce
- 3 ounces (7081) Spicy Brown Rib Rub
- 1 tablespoon (4007) Applewood Smoked Salt
Cooking ribs in the oven first and then on the grill allows you to easily cook the ribs until the meat is done, and then moving the ribs to a hot grill gives them a nice crusty sear on the outside.
