Our Smoked La Vera Paprika, or “Pimentón de la Vera Picante”, is a spicy, smoky variety of paprika from the celebrated La Vera region of Spain. Its deep, smoldering flavor comes from a traditional oak wood smoke-drying process, used to slowly dry out the chile peppers before grinding them into a fine powder.

Smoked Hot La Vera Paprika

Smoked Hot La Vera Paprika, or “Pimentón de la Vera Picante” in Spanish, is a spicy variety of paprika from the celebrated La Vera region of Spain. Due to the lengthy smoking process used to dry the peppers before grinding them, this hot variety of paprika has a rich, deeply smoky flavor.

Paprika is made by drying and grinding either sweet or hot red chile peppers (Capsicum annuum). Depending on where and from what type of chile pepper it is produced, paprika ranges in color, aroma and flavor. Hungary produces approximately eight different grades of paprika, which vary in color, from orange or light brown to deep, dark red, and in flavor, from pungent and spicy to sweet and mild. Paprika from Spain, which is generally mellower than its Hungarian counterparts, is available in three versions, sweet (“dulce”), mild ("agridulce") and spicy (“picante”).

Its distinct flavor comes from a traditional smoke-drying process. After the chiles are harvested, they are placed in large oak wood-burning smokehouses for weeks at a time, drying the chiles and infusing them with a deep, rich smoky flavor. To preserve all the rich color and flavor of the smoke-dried chiles, they are ground slowly by large stone wheels.

The La Vera region of Spain is one of multiple Designations of Origin, or Denominaciónes de Origen (DO) for this highly prized, authentic Spanish paprika. Designations of Origin, much like the Appellation D’Origine Controlée (AOC) of France, regulate the quality and verify the geographical origin of certain regional products, including wine, cheeses, condiments, and meats.

Although paprika was not introduced to Europe until the 16th century, after Spanish explorers brought back chile pepper plants from the Americas, paprika is now a key ingredient in several iconic dishes of Central and Eastern Europe. Spanish "patatas bravas," or spicy potatoes, are a traditional tapas dish made with a spicy paprika-infused sauce. Paprika also provides the color and flavor for one of the national dishes of Hungary, "goulash," which is a flavorful meat stew. In the United States, paprika is often used as a garnish, sprinkled on top of dishes such as deviled eggs to impart color and subtle flavor. However, its flavor becomes more vibrant when gently heated in oil. It is a popular seasoning in sausages, such as chorizo, because it imparts vivid color and a smoky, mildly spicy flavor.
