Pecan Crusted Salmon

Baked salmon fillets with a crunchy pecan coating make an excellent main course

Preheat oven to 375°.  In a food processer, combine Demerara Sugar, butter, pecan halves, Smoked Pecan Salt (Fine)Ground Yellow Mustard Seeds, and Ground White Pepper.  Process until mixture looks like bread crumbs.  Coat top of salmon with mixture.  Place on a baking sheet and cook for 16 minutes skin side down.  Broil on high for 2 minutes.  Serve with a slice of lemon.
