4011 Fleur de Sel - Fondant Potatoes

Golden brown with creamy center - a perfect side dish

Preheat oven to 350 degrees.  Season potatoes generously with (4011) French Fleur de Sel 'Flower of the Sea' Salt and (5015) Black Tellicherry Peppercorn.   In a medium pan over high heat, add  olive oil, andcook the potatoes face down until golden brown. Flip the potatoes over, add butter, Dried Thyme and enough chicken stock to cover the potatoes ¾ way up the side.  Finish cooking in oven for 20 minutes.  Remove from the oven and immediately season potatoes with a sprinkle of French Fleur de Sel 'Flower of the Sea' Salt .

- 5 Gold potatoes, split lenghtwise

- 2 cups chicken stock

- 2 tablespoons unsalted butter

- 2 tablespoons Olive Oil

- 1 pinch of Dried Thyme

- 1/2 teaspoon Black Tellicherry Peppercorn

- 1/2 teaspoon (4048) French Grey 'Dried' Salt (Fine)

- 1/2 teaspoon (4011) French Fleur de Sel 'Flower of the Sea' Salt

You will know when the oil is hot enough if it flows smoothly "like water" and quickly coats the bottom of the pan or when the surface glistens and shimmers.
