    • CULINARY: The bulb, foliage, and seeds of the fennel plant are used in many of the culinary traditions of the world.
    • POTENT: The small flowers of wild fennel (known as fennel "pollen") are the most potent form of fennel, but also the most expensive.
    • AROMA: Dried fennel seed is an aromatic, anise-flavored spice, brown or green in color when fresh, slowly turning a dull grey as the seed ages.
    • USE: The bulb is a crisp vegetable that can be sauted, stewed, braised, grilled, or eaten raw.
    • FOR USE: Fennel seeds are sometimes confused with those of anise, which are similar in taste and appearance, though smaller. The seeds are used in cookery and sweet desserts.

    FENNEL SEEDS come from the plant Foeniculum vulgare, native to the Mediterranean. These seeds are the dried fruit of the plant. Because of their physical resemblance to cumin seeds, fennel seeds are sometimes called sweet cumin or large cumin.

    Add fennel seeds to homemade sausage or sauerkraut, toast and grind it for soups and curries, or add it to marinades and spice rubs. Infuse olive oil with fennel seed, and brush it on pork, chicken or potatoes. Fennel seed is an ingredient in the important Five-Spice blend- used to make dishes like Chinese-style braised beef, Dan Dan noodles, or Cantonese Roast Pork. It is also an element for Bengali spice mix Panch Phoron, used in samosas and cauliflower curry.

    Add fennel seeds to dips like tzatziki for salmon or yogurt sauce for lamb kebabs. Throw some onto flatbreads before baking for some added savory crunch. They also add delicious, piquant flavor to herby breadsticks.

    Fennel seed is also interesting in sweet baked goods, like cookies and cornbread.
