These premium crystals form on the surface of the salt ponds. The Salinas (Salt Farms) of Manzanilla, Mexico produce this beautiful sea salt. The salt is hand harvested and carefully stored to ensure the highest quality possible. It's an ideal finishing salt. Salt has been harvested at Manzanilla for over 450 years, making it one of the oldest salt panning operations in the Americas. In the nearby town of Cuyutlan's is a 100 year old salt pan the Museo de la Sal - Salt Museum (sponsored by the University of Colima), which displays the processing involved in the extraction of sea salt and its history. Nearby along the train tracks there are many weathered wooden storage sheds that were used for warehousing the salt before shipping. During the Spanish colonization of Mexico, Cuyutlan was one of the major salt suppliers for the silver mines of Guanajuato and the area is still an important sea-salt producer today.
