French Onion Garlic - Air Fryer Scotch Eggs
8 large eggs, divided
1 lb. ground pork
3 Tbs. plus 2 tsp. French Onion Garlic seasoning (7603)
1 tsp. sugar
1 cup all purpose flour
1 cup panko bread crumbs
Vegetable oil spray
Mustard for serving (optional)
- Bring a large pot of water to a boil over high heat. Gently lower 6 eggs into the water and adjust the heat to maintain a gentle simmer. Cook eggs 7 minutes then transfer eggs to an ice bath. Carefully remove shells from the eggs.
- Place the pork in a medium mixing bowl and mix well with the French Onion Garlic seasoning and sugar. Place flour in a shallow bowl. Place 1/6 of the ground pork mixture between 2 pieces of plastic wrap and spread meat out until it is large enough to wrap around one of the eggs. Take one of the eggs and lightly dust with the flour. Remove top layer of plastic wrap and lay egg in the center of the pork. Gently shape the meat so that it encases the egg completely. Remove plastic wrap. Repeat with remaining pork and eggs.
- Place remaining uncooked eggs into a shallow bowl and whisk well. Place panko in another shallow bowl. Dredge sausage covered eggs in flour, followed by beaten eggs, and finish with the panko. Spray basket of air fryer with oil and add Scotch egg to basket. Repeat with remaining ingredients. Do not crowd air fryer basket and if need be, cook the eggs in 2 batches. Coat eggs with cooking spray and cook at 400F for 15 minutes or until golden brown and crispy. Serve hot or even at room temperature.
