7603 French Onion & Garlic Seasoning Herbed Chicken Meatballs

7603 French Onion & Garlic Seasoning Herbed Chicken Meatballs

Makes about 30

1 small onion, peeled and roughly chopped (about 1 cup)

½ cup Italian parsley leaves

1-lb. skinless, boneless chicken thighs, cut into 1-in. pieces

1 large egg

1/3 cup grated parmigiano reggiano

¼ cup panko breadcrumbs

1 Tbs. plus 2 tsp.  French Onion & Garlic Seasoning (7603)

  1. Heat oven 400F.  Place onion and parsley in bowl of food processor and pulse until finely chopped.  Add chicken, egg, cheese, breadcrumbs, and French Onion & Garlic seasoning, and pulse until everything is evenly mixed and the mixture looks like coarse sausage meat.  Use an ice cream scoop that holds 1 Tbs. or use a spoon to scoop 1 Tbs. of mixture, roll into balls, and place on a parchment-lined sheet pan.  You should have around 30 meatballs.  Bake for 20-25 minutes, or until cooked through.  Serve warm.
