7602 Meatballs with Rosemary Roasted Garlic

Meatballs with Italian Spices

Makes 40 small meatballs

 

Sauce

4 Tbs. unsalted butter

1 small sweet onion, peeled and finely chopped (about 1 cup)

28 oz. crushed tomatoes

2 cups tomato juice

 

Meatballs

1 small onion, peeled and coarsely chopped

1-lb. ground beef

¾-lb. ground pork

1 cup dried bread crumbs

3 Tbs. 7602 Meatballs with Rosemary Roasted Garlic

 

  1. To Make Sauce:  Heat butter over medium-high heat, add onion, and cook 3-5 minutes.  Add crushed tomatoes and tomato juice and bring mixture to a simmer.  Reduce heat to low and simmer 40 minutes.  Season to taste with salt.

  2. To Make Meatballs:  Heat oven to 350F.   Place chopped onion in food processor or blender and pulse to form a coarse puree.  Measure out ½ cup and place in large mixing bowl along with ground beef, ground pork, bread crumbs, and Spicy Italian Roasted Garlic.  Mix until well combined.  Form into 40 small balls about 1 in. across (about 2 Tbs.).  Place meatballs on a parchment-lined sheet pan and bake 10-12 minutes.  Transfer meatballs to your pot of sauce and simmer for 10 minutes.  Serve warm.
