7102 Slow Burn Spicy Sweet Potato Chips with Dipping Sauce

Put 1” to 2” of Canola Oil in a frying pan. Heat to 335 degrees.

Thinly slice sweet potato (a mandolin / slicer is recommended) and then place slices into a bowl of water.

When your oil has reached the proper temperature, pat dry small batches of the sweet potato slices before putting into the hot oil. Fry your chips in small batches so as not to crowd the pan. Flip chips once during the cooking process and remove them when golden brown.

Place chips on a wire rack to drain and immediately season with Slow Burn Seasoning.

Chips

- 1 large sweet potato

- 1 teaspoon (7102) Slow Burn Seasoning

- Canola Oil for frying

Dipping Sauce

In a small bowl, combine Mayonnaise, and Slow Burn Seasoning.

- 3 tablespoons Mayonnaise

- 1 teaspoon (7102) Slow Burn Seasoning to taste

Trying to fry too many chips at once will lower your oil temperature and result in greasy chips.
