7102 Slow Burn Chicken Sausage Meat Balls

7102 Slow Burn Herbed Chicken Meatballs

Makes about 30

1 small onion, peeled and roughly chopped (about 1 cup)

½ cup Italian parsley leaves

1-lb. skinless, boneless chicken thighs, cut into 1-in. pieces

1 large egg

1/3 cup grated parmigiano reggiano

¼ cup panko breadcrumbs

1 Tbs. plus 1 tsp. Slow Burn seasoning (7102)

  1. Heat oven 400F.  Place onion and parsley in bowl of food processor and pulse until finely chopped.  Add chicken, egg, cheese, breadcrumbs, and Slow Burn seasoning, and pulse until everything is evenly mixed and the mixture looks like coarse sausage meat.  Use an ice cream scoop that holds 1 Tbs. or use a spoon to scoop 1 Tbs. of mixture, roll into balls, and place on a parchment-lined sheet pan.  You should have around 30 meatballs.  Bake for 20-25 minutes, or until cooked through.  Serve warm.
