7092 Vadouvan Curry Pickled Cauliflower

Makes about 8 cups

 

2 cups apple cider vinegar

1 cup white vinegar

2/3 cup sugar

3 Tbs. Vadouvan Curry (7092)

3 cups cold water

1 head cauliflower, leaves and core removed, broken into florets (about 8 cups)

2 jalapenos, sliced into thin rings

 

  1. Place apple cider vinegar, white vinegar, sugar, and your choice of seasoning in large pot and bring mixture to a simmer over medium-high heat, stirring until sugar has dissolved.  Remove from heat and add cold water.  Let mixture come to room temperature.

  2. Place cauliflower and jalapenos in large non-reactive container.  Pour vinegar mixture over cauliflower and transfer to refrigerator.  The cauliflower will be ready to eat in 24 hours but will continue to deepen in flavor the longer it sits.
