7084 Golden Chicken with Potatoes and Spinach
This one-pan chicken dish is the perfect weeknight meal. It comes together quickly and all the work is done in the oven.
8 chicken thighs, skin on and bone-in (about 3.5-4 lbs.)
4 Tbs. Honey Soy Turmeric Seasoning (7084)
2.5 lbs. Yukon gold potatoes, sliced in half and then into ½-in. thick slices
1 large onion, diced
2 Tbs. grape seed or neutral vegetable oil
salt and pepper
5 oz. spinach leaves
- Preheat oven 400F. Season chicken thighs with Honey Soy Turmeric seasoning and set aside.
- Line a sheet pan with parchment paper. Toss potatoes and diced onion with oil in a large bowl and season lightly with salt and pepper. Spread mixture in an even layer on sheet pan and lay chicken thighs, skin-side up, over the potato mixture. Transfer sheet pan to oven and bake 35-40 minutes or until chicken is browned and has reached an internal temperature of 160F. Remove chicken and set aside on a plate. Return sheet pan to oven, and continue to bake 10-15 minutes or until potatoes are cooked through and browned. Scatter spinach on top of potatoes, and bake 3-5 minutes more or until spinach is wilted. Toss potato and spinach mixture together and serve with the chicken.
