7079 Everything & More Homemade Bagels

Mix warm water, yeast, and sugar in a bowl and rest for about 5 minutes until yeast foams. Pour flour into a stand mixer and add the yeast, water and sugar mixture. Using the dough hook attachment and the mixer on a low setting add the Olive Oil, eggs, and 2 teaspoons of French Grey salt. Continue until dough is smooth.

Coat the inside of a bowl with 1 teaspoon Olive Oil. Place the dough into the bowl and cover with a moist cloth. Allow dough to rise in a warm place for 30 minutes or until dough has doubled in size.

Fold the dough over on itself and knead again. Form the dough into a ball and divide into 8 equal pieces. Roll the pieces into logs long enough to wrap around your hand, overlap the ends, and roll to bind together. Place the rings on a baking tray covered with parchment paper. Cover them with a cloth and let rise for 10 minutes. Bring 6 quarts of water to a boil and preheat the oven to 400°.

Gently place the bagels into boiling water for 3 minutes, flip once. Remove with slotted spoon and place on a baking tray to drain and immediately sprinkle with Everything & More Seasoning.

Bake at 400° for 20 minutes or until golden brown. Leave to cool on a baking rack. Serve bagels with cream cheese mixed with Dried Green Chives.
