7076 Spicy Citrus Mojo Pork Loin
7076 Spicy Citrus Mojo Seasoning Rub Blend
Pork Loin: Rub the pork loin with Spicy Citrus Mojo Seasoning. Place in a covered container and refrigerate overnight.
Preheat oven to 350°. Sear pork loin on all sides in a hot pan with olive oil. Transfer to an oven safe covered dish and add chicken stock and butter. Cook for approximately one hour (until meat thermometer reads165°). Allow meat to rest for at least 5 minutes before slicing.
Rice: Cook rice according to box directions. Add olive oil, butter, lime, cilantro, and Himalayan Pink Salt. Mix well and serve.
- 1 pound pork loin
- 2 tablespoons (7076) Spicy Citrus Mojo Seasoning
- 2 cups chicken stock
- 2 tablespoons unsalted butter
- 3 cups white rice
- 2 tablespoons Whole Leaf Cilantro
- 2 tablespoons Olive Oil
- 1 tablespoons unsalted butter
- Himalayan Pink Salt, to taste
- Juice of half a lime
Add a little flour and cornstarch to the pan drippings and bring to a boil to make a delicious gravy.
