Spicy Citrus Mojo Roasted Kabocha Squash
1 small kabocha squash (about 2 lbs.)
2 Tbs. extra virgin olive oil
1 Tbs. plus 1 tsp. Spicy Citrus Mojo (7076)
Heat oven 400F. Slice kabocha in half through the stem and remove seeds. Slice halves into ½-in. thick slices and lay them in a single layer on a parchment-lined sheet pan. Brush both sides with olive oil and season with your choice of seasonings.
Roast squash for 20-25 minutes, or until you can easily pierce flesh with a butter knife. Serve warm or at room temperature.
