7076 Slow-Cooked Spicy Citrus Mojo Pork

Slow-Cooked Spicy Citrus Mojo Pork

Serves 6-8

3½ lbs. pork butt, cut into 1-in. x 2-in. pieces

¼ cup Spicy Citrus Mojo Seasoning (7076)

1 large onion, skin removed and coarsely chopped (about 1½ cups)

1 jalapeno, stem removed and coarsely chopped

4 garlic cloves, peeled and crushed

2 bay leaves

1 tangerine or small orange, sliced in half

1.  Heat oven to 300F.  Season pork with Mojo seasoning and place in a large Dutch oven.  Scatter onion, jalapeno, garlic, and bay leaves on and around pork.  Squeeze the 2 halves of the tangerine over the pork and leave the spent halves in the pot.  Place a piece of parchment paper directly on top of the pork mixture and cover pot with lid.  Transfer pot to oven and cook pork 3-4 hours, or until meat falls apart easily with a fork.  Discard bay leaves and tangerine peels.  Serve over rice or with tortillas.
