7060 Peri Peri Sheet Pan Chicken with Baby Broccoli and Fingerling Potatoes

7060 Peri Peri Sheet Pan Chicken with Baby Broccoli and Fingerling Potatoes

Serves 4

4 bone-in chicken thighs

1-lb. fingerling potatoes, sliced in half lengthwise

5 Tbs. extra virgin olive oil, divided

1 Tbs. Peri Peri seasoning (7060), divided

1-lb. baby broccoli

  1. Heat oven to 425F.  Place chicken thighs, potatoes, 3 Tbs. olive oil, and 2½ tsp. Peri Peri seasoning in a large mixing bowl and toss well to combine.  Lay the chicken thighs on a parchment-lined sheet pan and arrange the potatoes, cut side down on the baking sheet.  Bake 30 minutes.


  2. While chicken is baking, trim the baby broccoli bottoms and place them in a mixing bowl with the remaining olive oil and spice mixture.  Toss to combine.  Remove sheet pan from the oven after 30 minutes and arrange baby broccoli around chicken on sheet pan.  Return sheet pan to oven and cook 10 more minutes.  Serve warm.
