7030 Seared Flank Steak with Onions and Peppers

7030 Seared Flank Steak with Onions and Peppers

Serves 4

1 flank steak (about 1 ½ lbs.)

4 Tbs. olive oil, divided

4 tsp. Steakhouse Seasoning (7030)

1 Tbs. unsalted butter

4 bell peppers, assorted colors, seeds removed and cut into ¼-in. slices (about 4 cups)

1 small onion, peeled and cut into ¼-in. slices (about 1 cup)

2 Tbs. aged balsamic vinegar

2 Tbs. chopped Italian parsley

  1. Rub flank steak with 2 Tbs. olive oil and sprinkle with 2 tsp. Steakhouse Seasoning.  Let marinate at least one hour or up to overnight in the fridge.
  2. Heat large cast iron skillet over medium-high heat.  Add remaining olive oil to pan and when the oil is shimmering, carefully lay the seasoned steak in the hot pan. 

    Sear about 4 minutes on one side and 3 minutes on the second side for mid-rare.  When you flip the steak to the second side, add the butter to the pan.  Remove steak after 3 minutes on the second side and transfer to a plate to rest. 

    Pour off all but 2 Tbs. oil from pan and return pan to heat.  Add peppers, onion, and remaining seasoning and cook 7-9 minutes, stirring often, until peppers and onions are softened, but are not mushy. 

    Stir in balsamic vinegar and parsley, toss well, and transfer to a plate.  Slice steak and serve with pepper mixture.
