7024 Best of the Bay Shrimp Rolls

7024 Best of the Bay Shrimp Rolls

Serves 8

2 lbs. large shrimp, peeled and deveined
½ tsp. baking soda
6 Tbs. Best of the Bay seasoning (7024), divided
2 celery stalks, finely chopped (about ½ cup)
4 scallions, thinly sliced (about ½ cup)
½ cup mayonnaise
1 Tbs. lemon juice
¼ cup melted butter
8 split top or regular hot dog buns


1. Place shrimp in medium mixing bowl and toss with baking soda and refrigerate for 15-30 minutes.


2. Prepare an ice bath. Remove shrimp from fridge and place in a medium pot.
Add 5 Tbs. Best of the Bay seasoning and cold water to cover the shrimp by 1 inch. Place pot over medium-high heat and bring mixture to 170 F (use an instant read thermometer or a candy thermometer). When water has reached the target temperature, use a slotted spoon to transfer shrimp to ice bath. When chilled, remove shrimp from ice bath and transfer to a paper towel lined sheet pan and blot dry. Chop shrimp into ½-in. pieces.


3. Combine chopped shrimp, remaining seasoning, celery, scallions, mayonnaise, and lemon juice in mixing bowl and stir to combine.


4. Brush the insides of buns with melted butter and toast to desired doneness. Fill rolls with shrimp mixture and serve immediately.
