7024 Best of the Bay Shrimp Cocktail

7024 Best of the Bay Shrimp Cocktail

Serves 6-8

2 lbs. large shrimp, peeled and deveined, with the tail intact

½ tsp. baking soda

5 Tbs. Best of the Bay seasoning (7024)

cocktail sauce and lemon wedges for serving

  1. Place shrimp in medium mixing bowl and toss with baking soda and refrigerate for 15-30 minutes.
  2. Prepare an ice bath.  Remove shrimp from fridge and place in a medium pot.  Add Best of the Bay seasoning and cold water to cover the shrimp by 1 inch.  Place pot over medium-high heat and bring mixture to 170 F (use an instant read thermometer or a candy thermometer).  When water has reached the target temperature, use a slotted spoon to transfer shrimp to ice bath.  When chilled, remove shrimp from ice bath and transfer to a paper towel lined sheet pan and blot dry.  Serve chilled shrimp with cocktail sauce and lemon wedges.
