5285 Cinnamon Sugar Buttermilk Doughnut Holes

Makes about 25

2 cups AP flour

1/3 cup sugar

1 Tbs. plus 1 tsp. baking powder

½ tsp. salt

1 cup buttermilk

1 large egg

1 tsp. vanilla extract

¼ cup butter, melted and cooled to warm, not hot

vegetable oil or shortening for frying

1 cup cinnamon sugar (5285)

 

  1. Whisk together flour, sugar, baking powder, and salt in medium mixing bowl.  Whisk buttermilk, egg, and vanilla in measuring cup.  Stir buttermilk mixture into flour mixture until just combined.  Fold melted butter into batter.


  2. Add enough vegetable oil or shortening in a pot to reach a depth of 3 inches.  Heat oil to 350F and try to maintain this temperature for the duration of frying the doughnuts.  Using a small ice cream scoop (mine holds a scant 2 Tbs.), carefully drop a few portions of dough into oil, making sure not to crowd the pan.  Cook them 1-2 minutes per side or until golden brown.  Transfer cooked doughnuts to a paper towel lined pate and repeat with the remaining batter.


  3. Dredge the doughnuts in the sugar and tap off excess.  Doughnuts are best the day they are made.
