5228 Thai Coconut Green Curry Chicken with Basmati Rice

5228 Thai Coconut Green Curry Chicken with Basmati Rice


In a medium bowl, combine Ground Turmeric, Garlic Powder, Fleur de Sel, Long Pepper, and 1 tablespoon of the Thai Coconut Green Curry Powder.

Evenly coat chicken with spice mix.

Combine remaining 2 tablespoons Thai Coconut Green Curry Powder with fish sauce in a small bowl and set aside.

In a large skillet, heat coconut oil over medium-high heat. Add onions and cook until translucent, about 5 min. Add seasoned chicken and cook 5 more min. Stir in vegetables and Thai Coconut Green Curry Powder and fish sauce mixture. Add coconut milk and water.

Bring to a boil, and then reduce to a simmer. Cover and cook until chicken is done.

Serve over Steamed Aged Basmati Rice (2 Years).

- ¼ cup (5228) Thai Coconut Green Curry Powder

- 2 tablespoons fish sauce

- ½ lime, juiced

- 1 can coconut milk

- 1 tablespoon peanut butter

- ¼ cup grape tomatoes, sliced

- ½ onion, sliced

- 3 carrots, peeled, sliced diagonal

- ½ red bell pepper, sliced

- ½ yellow bell pepper, sliced

- ½ package snow peas

- 1 tablespoon (5176) Turbinado Sugar

- 1 green onion, sliced

Chicken

- 1 pound boneless skinless chicken breast, sliced thin

- 1 teaspoon (5228) Thai Coconut Green Curry Powder

- ½ teaspoon (5157) Fleur de Sel Salt
