    Serves 6-8


    3 large sweet potatoes (about 2 lbs.)

    1 ¼ cup all purpose four

    ¼ cup powdered sugar

    ¼ tsp. salt

    ½ cup butter, melted cooled to warm

    1 cup half and half

    ½ cup maple sugar (5152)

    ¼ cup turbinado sugar

    3 large eggs

    2 tsp. Pumpkin Spice blend (5164)

    1 tsp. vanilla extract

    ½ tsp. salt


    1. Heat oven to 400F.  Poke sweet potatoes several times with a sharp knife and place on a parchment-lined sheet pan and bake for 45 minutes to an hour, or until potatoes are tender.  Let potatoes rest until cool enough to handle.  Reduce oven temperature to 350F.
    2. Place flour, powdered sugar, and salt in a mixing bowl.  Pour in melted butter and stir with a spatula until combined.  Press dough into a 10-in. round tart pan in an even layer on the bottom and up the sides.  Prick the bottom of the crust and the sides of the tart with a fork several times and bake 15-20 minutes or until a light golden brown.
    3. While crust is baking, make filling.  Peel sweet potatoes and transfer 1½ cups of sweet potato to the bowl of a food processor (you may have some extra sweet potato).  Add half and half, maple sugar, turbinado sugar, eggs, Pumpkin Spice, vanilla, and salt.  Process until smooth.  When crust is ready, pour sweet potato mixture into crust and bake 35-40 minutes, or until filling is slightly puffed and set.  Serve warm or chilled with whipped cream, if desired.
