5123 Caraway Czech Cabbage Soup

Drain the sauerkraut, place it in a bowl, and set aside.
In a Dutch oven, heat the olive oil on medium heat. Sauté the onions until translucent. Add the Keilbasa and cook until browned. Add the potatoes and cook for another 2 minutes.

Season with Garlic Powder, Bay Leaves, Smoked Bittersweet Paprika, Whole Caraway Seeds, Ground Caraway Seeds, Long Pepper.

Add the beef broth, bring to a boil, and then reduce to a simmer. Add the sauerkraut, cover and simmer on low heat for an hour. Season with Smoked Salt, to taste.

- 1 pound Kielbasa Sausage (4 links), cut into ¼” pieces

- 2 large potatoes, peeled and cubed

- 1 small onion, finely chopped

- 1 tablespoon (5007) Garlic Powder

- 1 tablespoon Olive Oil

- 2 Hand (5027) Selected Bay Leaves

- 2 tablespoons (5159) Smoked Bittersweet Paprika

- 1 tablespoon (5123) Whole Caraway Seeds

- 1 teaspoon (5192) Ground Caraway Seeds

- ¼ teaspoon (5057) Long Pepper "Wild Picked", freshly ground

- 8 cups beef broth, unsalted

- 2 pounds of sauerkraut

- (4007) Applewood Smoked Salt, to taste

For a garnish, serve with a dollop of sour cream
