5050 Honey Bourbon Glazed Ham

5050 Honey Bourbon Glazed Ham

Allow ham to warm up to room temperature before cooking. In a small bowl, whisk together light brown sugar, honey, bourbon, Dijon Mustard, molasses, Worcestershire sauce, Cayenne Pepper, and Ground Cloves.

Preheat oven to roast at 325°. Place ham onto the rack of a roasting pan and pour the beef stock into the bottom of the roasting pan. Pour half of the honey bourbon mixture onto the ham and roast for 30 minutes on the lowest rack in the oven.

After 30 minutes, generously baste, turn ham over, and pour the remaining honey bourbon mixture onto the ham. Roast for another 30 minutes, generously baste, turn ham over, baste again, and cover with aluminum foil.

Reduce heat to 275°. Change setting on oven to bake and bake ham for another 30 minutes. Baste ham, turn ham over, baste again and bake covered for a final 30 minutes. Remove from the oven and let rest for 30 minutes covered before serving. Strain pan juices into a gravy dish to serve alongside the ham.

- Fully cooked, bone in spiral ham (7 - 10 pounds)

- ½ cup light brown sugar, firmly packed

- ½ cup honey

- ½ cup bourbon

- 1/3 cup Dijon Mustard

- 1/3 cup molasses

- ½ teaspoon Worcestershire sauce

- 1 teaspoon (5006) Cayenne Pepper

- 2 tablespoons (5050) Ground Cloves

- 2 cups beef broth

Roasting the ham first uncovered will caramelize the edges of the ham.

The honey, molasses, and brown sugar turn this into a caramel-covered ham
