4114 Matcha salt Butter-Dipped Radishes
Makes over 30
3 bunches of radishes
2 sticks of cold butter, but into 1 Tbs. pieces
2 Tbs. Matcha salt (4114)
- Carefully wash and dry radishes with their tops intact. Trim and remove any wilted leaves and slice a small slice off of the bottom of each radish so that there is a flat surface that will keep them from rolling on a plate.
- Place 10 Tbs. of butter and place them in a medium mixing bowl set over simmering water and whisk constantly until butter is melted. Remove bowl from heat, and whisk in 1 piece of butter at a time, until all the butter is incorporated and the butter is opaque in color. Dip each radish halfway in the butter mixture and then lay on a parchment-lined sheet pan and chill in the refrigerator until the butter sets, about 10 minutes. Serve with your choice of seasonings or salts.
