Stir fried in a Wok for an authentic taste

4096 Cyprus Mushroom Fried Rice with Tofu 

Tofu: Remove tofu from package, drain, and slice on its side into 3 equal rectanglesCover with a kitchen towel and press to remove all moisture from tofu.
Season both sides with a drop of Sesame Oil, Cyprus Wild Mushroom Salt (Flake), Wild Red Szechuan Peppercorn, Ground Ginger and Garlic Powder.
Cut tofu into 1” squares. Heat a Wok on high heat. Add 1 Tablespoon Peanut Oil, and a splash Soy Sauce. Brown tofu on both sides and set aside.

Fried Rice: In a small bowl, whisk together eggs, a pinch of Cyprus Wild Mushroom Salt (Flake), and Wild Red Szechuan Peppercorn. In a hot Wok add 1 Tablespoon Sesame Oil and soft scramble eggs. Remove eggs and set aside.

Add 1 Tablespoon of peanut oil and 1 Tablespoon Sesame Oil to hot Wok and sauté carrots for 2-3 minutes. Then add sliced mushrooms, scrambled eggs, cooked rice, and peas. Season with Garlic Powder, Ground Ginger, remainder of Cyprus Wild Mushroom Salt (Flake), Wild Red Szechuan Peppercorn, and Soy Sauce. Toss in sliced green onions and tofu. When are ingredients are mixed together, remove from heat and serve.

- 12 mushrooms, sliced

- 3 tablespoons Peanut Oil

- 2 tablespoons Sesame Oil

- 5 eggs

- 1 package Firm Tofu

- 3 cups cooked rice

- ½ cup carrots, peeled and diced

- 4 green onions, sliced

- ¼ cup frozen peas

- ¼ cup Soy Sauce

- 1 tablespoon (5007) Garlic Powder

- 2 teaspoons (5019) Ground Ginger

- 2 teaspoons (4096) Cyprus Wild Mushroom Salt (Flake)

- 1 teaspoon (5058) Wild Red Szechuan Peppercorn

The more the tofu is dried before cooking, the better it will brown and retain flavor
