4011 Fleur de Sel Salted Caramel Peanut Butter Cups

Melt chocolate in a metal bowl over simmering water (or in a double boiler). In a small saucepan, combine water and sugar and stir over medium heat until the sugar dissolves. Increase the heat and boil until the syrup becomes a caramel color.

Remove from the heat and add the heavy cream. Stir until smooth. Add a pinch of French Fleur de Sel Salt. Add the caramel into the melted chocolate.

Arrange mini baking cups on a sheet pan.

Melt peanut butter in a small heat resistant dish in microwave for 10-15 seconds.
Fill a small zip lock bag with the melted peanut butter. Cut a tiny hole in the bottom corner of the zip lock. Squeeze peanut butter into the mini cups filling them half way.

Finish filling the cups with the melted chocolate caramel mixture. Top with French Fleur de Sel Salt and refrigerate overnight.

 

- 3.5 ounces chocolate (70% cocoa)

- 2 tablespoons peanut butter, creamy

- ½ cup water

- ¼ cup sugar

- ¼ cup heavy cream

- 1 tablespoon (4011) French Fleur de Sel 'Flower of the Sea' Salt

 

Use extra salted caramel as a topping for popcorn!
